Vegan Apple Pancakes Recipe
This hearty and healthy vegan pancake is full of whole grains.

Ingredients
- 2 1/2 cups water
- 1/2 cup raw almonds
- 1 medium apple quartered and cored
- 1 tbsp. flaxseeds
- 2 cups whole wheat flour
- 1 1/2 tbsp. baking powder
- 1/2 tsp. kosher or sea salt
- 1/2 tsp. ground cinnamon

Instructions
- Add water, almonds and apple to WildSide+ jar and secure lid. Select "Whole Juice" cycle or blend on a Medium to Medium-High speed for 50-60 seconds.
- Add remaining ingredients to the jar and secure lid. Select "Batters" cycle or blend on a Medium to Medium-Low speed for 30 seconds.
- Allow batter to rest 5 minutes.
- Heat griddle or other pan over medium to medium high heat and grease.
- Pour approximately ¼ cup batter onto heated pan and cook approximately 1 minute or until bubbles break the surface of the pancake and the underside is golden brown.
- Flip and cook for approximately 30 seconds. Repeat with remaining batter.
- Serve immediately or keep warm in the oven at 200˚F loosely wrapped in foil.
Notes
To make this recipe in the FourSide jar, decrease measurements by one third.
It’s hard to say, considering that this is a vegan recipe, but I often replace whole wheat flour with an equal part oat flour. (gluten free, of course) It takes about a 20 min rest period, but it generally works well.

It should work well. I’m planning to use almond flour.How about substituting the water and almonds just w almond milk? How much?
TENDER…EASY…DELICIOUS, followed recipe as is and these are GREAT! So LIGHT IN TEXTURE and no milk or oil! This will be my go to recipe for pancakes!
Flax seed is often used a replacement for eggs. Since this recipe does not use eggs then leaving out the flax seed might alter the end result. I also have used Chia seed as an egg replacement, you could probably sub that in equal amounts.
