Blueberry Breakfast Bars Recipe

Ingredients
- 1 ripe banana
- 2 large eggs
- 1/3 cup low-fat plain yogurt
- 1/2 cup applesauce
- 2 tbsp. coconut oil melted
- 0.66 cup brown sugar
- 1 tsp. vanilla extract
- 1 1/4 cup whole wheat flour
- 1 cup rolled oats divided
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 0.66 cup pecans
- 1 cup fresh blueberries

Instructions
- Preheat oven to 350°F.
- Add banana, eggs, yogurt, applesauce, oil, brown sugar, and vanilla to jar. Secure lid and select "Batter."
- Add whole wheat flour, ¾ cup rolled oats, baking powder, salt, cinnamon, and pecans to jar. Secure lid and press "Pulse" 4–6 times or until dry ingredients are incorporated. Fold in blueberries.
- Pour batter into greased 9-inch-x-13-inch baking pan. Sprinkle with remaining ¼ cup rolled oats.
- Bake for 30–35 minutes or until toothpick inserted in center comes out clean. Cool completely.
- Remove from pan, and cut into 15 bars. Bars can be individually wrapped and stored for 3 days or frozen for 3 weeks.
You can find gluten free rolled oats.

Wow just made these and they are awesome! Used almond flour and almonds also half of a banana ! Brought calorie count down some. Great!
We use coconut yogurt, not sure how it will substitute for baking but that is what I plan on trying. You can buy it at the whole foods stores, I buy mine at Sprouts.
This is awesome! It is now December and I’ve made these bars every week since I first received the e-mailed recipe in August. We live in Alaska, so I use wild blueberries and homemade crab applesauce. During the week, my husband and I take them to work to enjoy with our morning coffee. On the weekends, they are part of our breakfast. We both just love them. We can’t thank you enough for this recipe.
