Blueberry Breakfast Bars Recipe

Ingredients
- 1 ripe banana
- 2 large eggs
- 1/3 cup low-fat plain yogurt
- 1/2 cup applesauce
- 2 tbsp. coconut oil melted
- 0.66 cup brown sugar
- 1 tsp. vanilla extract
- 1 1/4 cup whole wheat flour
- 1 cup rolled oats divided
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 0.66 cup pecans
- 1 cup fresh blueberries

Instructions
- Preheat oven to 350°F.
- Add banana, eggs, yogurt, applesauce, oil, brown sugar, and vanilla to jar. Secure lid and select "Batter."
- Add whole wheat flour, ¾ cup rolled oats, baking powder, salt, cinnamon, and pecans to jar. Secure lid and press "Pulse" 4–6 times or until dry ingredients are incorporated. Fold in blueberries.
- Pour batter into greased 9-inch-x-13-inch baking pan. Sprinkle with remaining ¼ cup rolled oats.
- Bake for 30–35 minutes or until toothpick inserted in center comes out clean. Cool completely.
- Remove from pan, and cut into 15 bars. Bars can be individually wrapped and stored for 3 days or frozen for 3 weeks.
Loved these! I made a lot of substitutions based on what we had and liked…oatmeal flour instead of ww flour, almonds instead of pecans, Coach’s steel cut oats instead of old fashion, vanilla yogurt instead of plain, and just 1 tbls on canola oil instead of coconut. And even with all the variations they turned out super delicious. So I’d say it’s safe to sub and experiment with this as a base recipe as needed.
Most of the time applesauce is used in baking for it’s high pectin content. Any pureed fruit or vegetable with high pectin content would work as a substitute. Here are a few fruits and vegetables with high pectin: carrots, peas, plums, and grapes.
This may change your baking time, but it more than likely will work well.
