Ingredients

  • 1 ripe banana
  • 2 large eggs
  • 1/3 cup low-fat plain yogurt
  • 1/2 cup applesauce
  • 2 tbsp. coconut oil melted
  • 0.66 cup brown sugar
  • 1 tsp. vanilla extract
  • 1 1/4 cup whole wheat flour
  • 1 cup rolled oats divided
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 0.66 cup pecans
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350°F.
  2. Add banana, eggs, yogurt, applesauce, oil, brown sugar, and vanilla to jar. Secure lid and select "Batter."
  3. Add whole wheat flour, ¾ cup rolled oats, baking powder, salt, cinnamon, and pecans to jar. Secure lid and press "Pulse" 4–6 times or until dry ingredients are incorporated. Fold in blueberries.
  4. Pour batter into greased 9-inch-x-13-inch baking pan. Sprinkle with remaining ¼ cup rolled oats. 
  5. Bake for 3035 minutes or until toothpick inserted in center comes out clean. Cool completely.
  6. Remove from pan, and cut into 15 bars. Bars can be individually wrapped and stored for 3 days or frozen for 3 weeks.

    I’m confused about Coconut oil. There is so much good media hype about it, yet I’m told, because of high cholesterol, to keep saturated fats down. Coconut oil has high saturated fat, unlike Olive Oil which has the heart healthy Mono and Poly fats. I saw a nutritionist, and she said same, which is not sure what all the hype for Coconut is about and told me to avoid it because of the high Saturated Fats. ??? Would love to hear a rebuttal or counter explanation.

Would love to hear a rebuttal or counter explanation regarding whether some of the health benefits of Coconut Oil out weight the negatives of high saturated fats.

    It sounds delicious but that’s not much protein, given the amount of sugar in this to start the day. I’d suggest making a cream-cheese or neufchatel based icing which includes a protein powder of some sort. Use stevia to sweeten the icing. Sprinkle with walnut pieces.
