Ingredients

  • 1/4 avocado
  • 1/2 large carrot
  • 2 sprigs fresh cilantro
  • 3/4 tsp. garlic powder
  • 3/4 tsp. kosher salt
  • 1 tsp. no-salt herb seasoning
  • 2 tbsp. onion
  • 1 chunk pepper jack cheese
  • 1 slice red pepper approximately 1/3 cup
  • 2 Roma tomatoes quartered
  • 1/2 cup tortilla chips
  • 2 cups warm water

Instructions

  1. Add all ingredients but tortilla chips to FourSide or WildSide+ jar in order listed and secure lid.
  2. Select "Soup" or "Hot" or "90" cycle (might want to run cycle twice for desired heat) or blend on a high speed for 90-180 seconds.
  3. Add tortilla chips, secure lid, and press "Pulse" 23 times.

Notes

For more texture, when adding tortilla chips to jar, include ingredients such as ½ cup black beans, corn kernels, cheese, chicken, and fresh tomatoes. Secure lid and press "Pulse" 2–3 times or until desired texture is reached.

    This is the first recipe I made in my blendtec and it was amazing! I used chili powder in place of the no-salt herb seasoning because that’s what I had available. The flavor of this soup is outstanding. This recipe is perfect as a base. I’m excited to add in some other ingredients next time (green chiles, black olives, chicken, corn…) to give it a little heartier flare. My family gobbled the soup up and my husband requested another soup for dinner tonight since last night’s turned out so well. Thank you blendtec. :)

    We don’t do cheese. I kind of muddled through this time but next time my modifications will include, 1t of McKay’s Chicken Seasoning (vegan) in the place of bullion, 1 cup Blue Diamond unsweetened cashew/almond milk in place of 1 of the cups of water, 1/2 cup steamed white corn, 1/2t Smoked Torula Yeast in place of Jack cheese. I left out the herb seasoning. Also felt this could have used a little more salt. I’d also either blend the beans less or just put them in whole and put the chips in my bowl AT the table. Confession: I did add about a tsp of taco seasoning this time. I might try it without next time so it will be healthier. Also I did use the soup setting… but we all know soups are best when simmered for a long period of time. Leftover and re-heated… even better!
