I roast all the veggies with some olive oil (except the cilantro and
avocado)- roast 3-4 garlic cloves in with the other veggies , and add chicken stock. Much richer. Very good recipe!

Not a lot of flavor initially but a really good base to build something amazing on! I made one batch as is then mixed it with my second batch which had half the water, some garlic, red pepper flakes, and extra seasoning. When the two batches were mixed it was an awesome soup! I served it with quesadillas as a Mexican tomato soup and grilled cheese!

This is delicious – I accidentally put in 3x the cheese – It was soooooo creamy, cheesy good this way – I also added some finely green chile condiment at the end for some heat – I wonder if this can be made with no cheese – perhaps cashew butter of cashews instead. Has anyone done that?

Really good. I lost my recipe for taco soup. Anyone have it?

Thank you for the feedback. A 1×1" square is perfect.
