Ingredients

  • 3 oz. cheddar cheese roughly chopped
  • 1/8 tsp. ground black pepper
  • 1/8 tsp. ground nutmeg
  • 1/4 tsp. kosher or sea salt
  • 1 cup vegetable broth
  • 1 cup water
  • 4 cups broccoli florets steamed and divided

Instructions

  1. Add 3½ cups broccoli florets and remaining ingredients to WildSide+ or FourSide jar. Secure lid and select "Soup" or blend on a High speed for 90-180, blending longer for hotter soup.
  2. Add remaining ½ cup broccoli florets to jar. Secure lid and press "Pulse" 3–5 times or until broccoli florets are desired size.

Notes

Add a pinch of crushed red pepper for a little kick.

    Is there a reason you have to steam the broccoli first? Ive seen other blenders that claim that you can just throw the raw veggies in and they will cook during the blending process.

    Raw broccoli may be used in the soup but it will take more than one 90-second soup cycle to get the heat one would want in soup.

    I tried the recipe as as stated. It was good. I modified it today: Mrs. Dash instead of salt. A garlic clove, chicken stock, an avocado and a dash of hot sauce added as well. It came out of the blender steaming hot with lots of flavour. I threw in some niblets for texture.

    If I try it again I’m leaving out the nutmeg – didn’t like it with the other flavors but think the base recipe has possibilities otherwise.

    This soup is soooooo good. Im in the process of adjusting my taste buds to enjoy healthy food. Since Im not quite there yet I added 4oz of sharp cheddar instead of 3. Since I did not read the instructions I ran the soup cycle twice instead of just 1 and then hitting pulse
    2 or 3 times. The result: a splendid creamy soup. Im looking forward to other recipes in this blog!
