Broccoli-Cheddar Soup Recipe
Do you love cheesy broccoli soup, but not all the calories that go with it? Try this lighter version, and garnish with chopped walnuts for a protein boost.

Ingredients
- 3 oz. cheddar cheese roughly chopped
- 1/8 tsp. ground black pepper
- 1/8 tsp. ground nutmeg
- 1/4 tsp. kosher or sea salt
- 1 cup vegetable broth
- 1 cup water
- 4 cups broccoli florets steamed and divided

Instructions
- Add 3½ cups broccoli florets and remaining ingredients to WildSide+ or FourSide jar. Secure lid and select "Soup" or blend on a High speed for 90-180, blending longer for hotter soup.
- Add remaining ½ cup broccoli florets to jar. Secure lid and press "Pulse" 3–5 times or until broccoli florets are desired size.
Notes
Add a pinch of crushed red pepper for a little kick.
I just microwaved some fresh broccoli stems and a very few florettes , was about 3 cups , also used old cheddar and chicken broth ,and it was great!
I tried making this soup using lumpy’s method and mine turned out really good. I will definitely make it again as my daughter is very picky and she liked it too :)
I’m alone so portions and leftovers can be an issue therefore I have the following questions:
1. Can I half the recipe and make in the wildside jar?
2. Can one refrigerate leftovers and reheat soup (loose chunkiness) in the blender? No, I don’t own a microwave ;-)
3. Can this be made in the twister jar?

1. Yes! It should still work just fine.
2. Yes! You can definitely heat it up again in the blender.
3. Yes! You’ll want to do either 1/4 or 1/3 of the amount of ingredients.
