Ingredients
- 3 oz. cheddar cheese roughly chopped
- 1/8 tsp. ground black pepper
- 1/8 tsp. ground nutmeg
- 1/4 tsp. kosher or sea salt
- 1 cup vegetable broth
- 1 cup water
- 4 cups broccoli florets steamed and divided

Instructions
- Add 3½ cups broccoli florets and remaining ingredients to WildSide+ or FourSide jar. Secure lid and select "Soup" or blend on a High speed for 90-180, blending longer for hotter soup.
- Add remaining ½ cup broccoli florets to jar. Secure lid and press "Pulse" 3–5 times or until broccoli florets are desired size.
Notes
Add a pinch of crushed red pepper for a little kick.

Fantastically delicious and easy! I made mine a vegan cream of broccoli soup. Here are my edits to the above. Steam 2 heads or use 2 bags of broccoli (peal and chop the tender part of the stem too if using whole broccoli) – easiest method is to rinse the broccoli, place it in a large microwave safe bowl and cover with plastic wrap, and then microwave for 5-6 minutes until tender. Meanwhile put 1 cup veggie broth and 1 cup water (or alternatively, 2 cups water and 2 vegetable bullion cubes), salt, pepper, nutmeg AND if you want a vegan cream soup, add 1 cup of raw cashews into the Blendtec and blend everything on high speed until smooth for 1-2 minutes. Add most of the hot broccoli to the cashew milk mixture in the jar and blend on high for another 90 seconds (or more if you like your cream soup very smooth); add remaining broccoli and pulse a couple times. Adjust salt, and voila, hot, healthy, delicious no dairy cream of broccoli soup…and it only takes about 20 minutes to make! I absolutely LOVE my Blendtec – it’s revolutionized the way my family eats – it’s truly a whole foods machine!
This recipe is so fast….literally the thing that takes the longest is the steaming of the broccoli. It’s a great recipe and tastes so good, even my kids like it!
Mine was watery too so I cut down on that. I also don’t add salt and just use all veg base. It does need a little more flavor in the herb arena but it’s such a quick and yummy soup!
This was amazing and quick! Based on other reviews I used 1.25 lb frozen broccoli, 2 carrots, 1 onion, 2 cloves garlic. I chopped the carrots into 3 pieces and the onion into 1/8th. I put all the vegetables in a bowl with a few tablespoons of water in the microwave for 10 minutes. I didn’t have broth so I just used 2 cups of water. I increased the cheese to 4 oz. I used salt and spices exactly as listed. This was really flavorful, not too watery, and was devoured in a single meal. The only change I might make next time is to not hold aside any of the broccoli for the end. I like a creamier soup and don’t feel the need for chunks of broccoli.
