Ingredients

  • 3 oz. cheddar cheese roughly chopped
  • 1/8 tsp. ground black pepper
  • 1/8 tsp. ground nutmeg
  • 1/4 tsp. kosher or sea salt
  • 1 cup vegetable broth
  • 1 cup water
  • 4 cups broccoli florets steamed and divided

Instructions

  1. Add 3½ cups broccoli florets and remaining ingredients to WildSide+ or FourSide jar. Secure lid and select "Soup" or blend on a High speed for 90-180, blending longer for hotter soup.
  2. Add remaining ½ cup broccoli florets to jar. Secure lid and press "Pulse" 3–5 times or until broccoli florets are desired size.

Notes

Add a pinch of crushed red pepper for a little kick.

    After reading some of the contents I decided to modify and it’s so yummy. Used organic chicken broth in place of the veggie broth and water. Added sauteed onion (1/4 onion ) and garlic ( 2 cloves). I also added a few shakes of my favorite no salt seasoning.

    I have made this numerous times in the 6 months since getting my Blendtec. Broccoli cheese soup was always a guilty pleasure I would have if eating out, not something I would make at home, because it’s usually a cheese soup with a little broccoli in it. This one has great texture and cheesy flavor with lots of broccoli and a moderate amount of cheese – amazing.

    I just made this tonight for dinner. It was very yummy. I used all unsalted chicken broth and no water and Tex mex cheese because that was all I had. It was just the right consistency.

    This is a good start…My suggestions:

    Lose the nutmeg (too overpowering)
    Add about a tablespoon of diced bell pepper and onion
    Chili powder is a nice addition.
    I also used almond milk instead of water and chicken boullion instead of broth.
    And some extra cheese for texture.
