Peanut Butter Chocolate Flourless Muffins

These moist, chocolatey muffins are gluten free, dairy free, oil free and refined sugar free.

Ingredients
- 1/3 cup unsweetened almond milk vanilla
- 1 ripe banana
- 1 large egg
- 1/3 cup peanut butter creamy
- 2 tsp. vanilla extract
- 3 tbsp. unsweetened cocoa powder
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 cup peanut butter chips optional
- 3 tbsp. peanut butter powder
- 3 tbsp. agave (or honey or maple syrup)

Instructions
- Preheat oven to 375°F.
- Add all ingredients except peanut butter chips to WildSide+ or FourSide jar and secure lid.
- Select "Dips" cycle or blend on a Medium to Medium-Low speed for 30 seconds.
- Stir in peanut butter chips.
- Pour batter into greased or lined muffin tin (about ¼ cup batter per muffin). Optionally, sprinkle chocolate chips on top.
- Bake for 15-18 minutes or until done.
Notes
The peanut butter powder is used to cut down fat and calories. If you'd like, you can use another 1/3 cup of peanut butter instead of the powder but you'll want to decrease the almond milk to 3 tbsp.
I made these and hate the taste of bananas in muffins so used a crisp apple peeled. Used almond butter instead of peanut butter for health reasons. Used honey — less than what it called for. Used regular chocolate chips because that is what I had. They turned out wonderful. Served them with frozen berries and Coconut Cream. Going to make them for our Marriage Enrichment Group this Friday.
What is peanut butter powder?
Any substitution for peanut butter powder other than adding more peanut butter?
I love these flourless muffins. This is my second time making them. Instead of using peanut butter powder, I used protein powder that is peanut butter flavor! That way there is extra protein in them for my husband and I to eat the muffins before working out. I used the Orgain protein brand. It’s organic, vegan, and delicious. I also didn’t have any peanut butter chips, so I just put three dark chocolate chips on each muffin for appearance. Also my bananas were on the smaller side, so I used two! I wanted to muffins to be as big as I could make them. I could have made 10 muffins, but instead I made slightly more than 1/4 cup muffins to make nine (or rather I eyeballed what seemed to be a little more than a 1/4 each muffin. 8 for preworkout, one to eat right after baking, Mmmmm. Oh! and I doubled the peanut butter protein powder to 6 Tbsp, and eyeballed a little more Almond milk to make up for adding more of a dry ingredient.
