Broccoli-Cheddar Soup Recipe
Do you love cheesy broccoli soup, but not all the calories that go with it? Try this lighter version, and garnish with chopped walnuts for a protein boost.

Ingredients
- 3 oz. cheddar cheese roughly chopped
- 1/8 tsp. ground black pepper
- 1/8 tsp. ground nutmeg
- 1/4 tsp. kosher or sea salt
- 1 cup vegetable broth
- 1 cup water
- 4 cups broccoli florets steamed and divided

Instructions
- Add 3½ cups broccoli florets and remaining ingredients to WildSide+ or FourSide jar. Secure lid and select "Soup" or blend on a High speed for 90-180, blending longer for hotter soup.
- Add remaining ½ cup broccoli florets to jar. Secure lid and press "Pulse" 3–5 times or until broccoli florets are desired size.
Notes
Add a pinch of crushed red pepper for a little kick.
I just finished this delicious soup which I made with some changes/additions.as under:
1. Used chicken stock made from cubes instead of vegetable broth as I did not have that. So I did not add any salt.
2. Added baby carrots and quarter green bell pepper to broccoli for steaming.
3. Added few leaves of baby spinach.
4. added a pinch of ground red chili and ground roasted cumin.
5. Used cheddar cheese slices because of ready availability.
Made this tonight, fixing the errors of my first try and the result was delicious (but perhaps not to everyone’s taste). The changes I made to the recipe were 1 1/2 cups of vegetable stock (unsalted), one half cup half and half (added during the final soup cycle, I do three), Wedge of red Onion, 1 tsp Garlic Powder, 1 Tsp Black Pepper, 1/4 Tsp Nutmeg, 2 Tablespoons of Roux (Two Tablespoons of Flour cooked in two tablespoons of butter) and six oz of Cheddar Cheese (instead of 3).
Loved it! my first soup recipe. I did not have vegetable broth so I put in some celery, little dried onion and Trader Joe’s 24 Seasoning Salute, which I use for everything, very Yum! And only 3 WW points.
I made this (with changes). I steamed onions and celery as well and added pepper jack cheese. It had a great flavor!
Can this recipe (or any of them on this website be doubled?)
