Ingredients

  • 1/8 tsp. paprika
  • 1/4 tsp. ground black pepper
  • 3/4 tsp. kosher or sea salt
  • 1/2 cup low-fat milk
  • 1/2 cup vegetable broth
  • 1 tbsp. olive oil
  • 2 red peppers deseeded and roughly chopped
  • 2 lbs. tomatoes quartered
  • 1 medium onion roughly chopped
  • 3 cloves garlic

Instructions

  1. Place garlic, onion, tomatoes, and red peppers on a 9-x-13-inch baking sheet, and cover with olive oil Roast at 375°F for 1 hour.
  2. Remove from oven, and allow to cool.
  3. Transfer roasted vegetables to WildSide+ jar, secure lid, and select "Soup."
  4. Add blended vegetables, broth, milk, salt, pepper, and paprika to medium saucepan.
  5. Simmer for 20 minutes to enhance flavor of soup. 

 


Notes

For a vegan version of this soup, replace low-fat milk with ½ cup coconut milk.

    Kudos to you Blendtec mods, for your positive, customer-focused feedback. Please know there are others that understand that a Blendtec is not just unique to those recipes for a Blendtec, but is an appliance that has many applications and produces a quality result because it is a superior blender.

    You roast your own veggies, and then heat it to finish which is part of the cooking process. Right, not everything’s done in the Blendtec and that’s OK because its all part of being in the kitchen and cooking!

    And you want to talk about marketing -? Job well done Blendtec! I would have never made this recipe if not for seeing it here. I would still be stuck on Tortilla Soup & Gazpacho, but your lovely boards present the recipes so favorably, I was inspired to try it. Have you checked out the recipe sites for Oster & Cuisinart? I would say you’ve expanded my ideas for using my Blendtec to think about more blending and cooking.

    Cathy, did you receive a cookbook along with your Blendtec? (Came in the box.) It’s a real-deal cookbook FULL of Blendtec-uniqe recipes – and a lot of raw and gluten-free recipes too! This sounds like what you’re looking for.

    I enjoy these regular recipes in my inbox precisely because they expand my ideas of how to use my Blendtec beyond the raw or ready-to-go ingredients, and it gets me thinking about ways to use it when cooking.

    I just used my Blendtec to make ketchup ! It worked great to process the tomatoes.. Th eliquid thickened very fast . I also used it to make vegetable tomato juice to can this summer. Very neat and easy to juice the veggies then simmer and can.
