Ingredients

  • 1/8 tsp. paprika
  • 1/4 tsp. ground black pepper
  • 3/4 tsp. kosher or sea salt
  • 1/2 cup low-fat milk
  • 1/2 cup vegetable broth
  • 1 tbsp. olive oil
  • 2 red peppers deseeded and roughly chopped
  • 2 lbs. tomatoes quartered
  • 1 medium onion roughly chopped
  • 3 cloves garlic

Instructions

  1. Place garlic, onion, tomatoes, and red peppers on a 9-x-13-inch baking sheet, and cover with olive oil Roast at 375°F for 1 hour.
  2. Remove from oven, and allow to cool.
  3. Transfer roasted vegetables to WildSide+ jar, secure lid, and select "Soup."
  4. Add blended vegetables, broth, milk, salt, pepper, and paprika to medium saucepan.
  5. Simmer for 20 minutes to enhance flavor of soup. 

 


Notes

For a vegan version of this soup, replace low-fat milk with ½ cup coconut milk.

    Made this recipe in our Blendtec, it was the first attempt at using the soup button (prior to this only been making smoothie and milkshakes) and unfortunately the last- the blender went totally crazy, started smoking and horrible smell of burning, shaking on the counter, wouldn’t stop when attempted and in the end had to cut off power supply to stop it!! Jug and blender burned out at the rubber points, v v disappointed as we loved making our milkshakes in this!

    In the end finished the recipe off in a regular cheap liquidiser! The soup itself was delicious!

    Unfortunately no more blendtec for us- turned out the advertised gaurantee doesn’t apply to uk customers!! So why it’s advertised with it or even sold in the uk is beyond me!!!

    I really liked this soup. At first it was a little thick so I thinned it down by adding about 1/2 cup more milk. My husband and I both loved it, however between the two of us we could easily finish in one setting, It only yeilded about 4 cups and that was after I added the extra milk.

    I am disappointed. I bought my Blendtec at Cosco. I was told it had a blenderbook. I got it in August. I am just now getting around to using it. I called the 1-800 number because there was not a blenderbook inside. The customer service rep. told me that since the company had gone green they were not including the book anymore. He said I could purchase one for $24.95! He also said all the book recipes and more are on the website. I don’t have regular access to high speed internet. If you live out in the country that does not exist. I have to use an ipad with wireless service if/when I can get a good connection.

    "Real deal"!? "Full" of recipes!? The so called "cookbook" that comes with the blendtec is more than pathetic! Complete with a whopping 10 recipes. Are you high, or do you work for blendtec!?
