I just made these and they taste pretty decent. I’d say a little bit better than an over sweetened energy bar. This would be a go-to snack for someone watching their diet. The texture worked out well for me but I have a twister jar. I think I might of over blended because mine don’t look nothing like the picture. I didn’t have flax seed so I used pecans instead. The only thing I measured was the oatmeal. Everything else, I eyeballed. When I make these again I will probably use white chocolate chips instead of the semi-sweet that I had on hand. Sorry if this is hard to read and I hope you get the gist. Also, I used a melon baller to shape the dough which yielded about 16 balls.

I think I’d only pulse the oats and flax seed until they were somewhat incorporated. Then I’d put the dry mixture into another bowl, add the rest of the ingredients and mix with my hands. There is very little "wet" in this recipe to mix in a blender – no matter how powerful. And I don’t think a food processor could even handle it. Possibly adding some dates or more liquid sweetener but then you’ve got more sugar and carbs! Some things are just easier and more logical to do by hand.

Can protein powder be substituted for the oats?
