Peanut Butter Chocolate Energy Bites

The perfect pick-me-up for an afternoon (or morning) snack!

Ingredients
- 1 cup oats
- 2 tbsp. ground flaxseed
- 1/2 cup peanut butter
- 1 tsp. vanilla extract
- 2 tbsp. honey
- 1/4 cup chocolate chips

Instructions
- Add oats and ground flax to Twister jar.
- Blend on a Low speed for 10 seconds. Turn Twister lid counter-clockwise during blending.
- Add peanut butter, vanilla and honey and secure lid.
- Blend on a Low speed for 20 seconds. Turn Twister lid counter-clockwise during blending.
- Stir or pulse in chocolate chips.
- Shape into 1” balls and store in an airtight container in the fridge.
Notes
If you use agave instead of honey, you may need to increase amount to create the right texture.
To make in WildSide+ or FourSide jar, increase ingredients by 1.5 (see below) and follow instructions above. You may need to stop blending and scrape sides down if cavitation occurs.
1 ½ cup oats
3 tbsp ground flax seed
¾ cup peanut butter
1 ½ tsp vanilla
3 tbsp honey
½ cup chocolate chips
The cookies actually taste pretty good. They don’t have any added sugar so don’t expect that kind of taste.
I baked the rest of the cookies at 300° for 60 mins. It’s a long time to bake but it was the only way I could get them to be crunchy and not fall apart.

I had a similar experience. Too much dry for the Blendtec even when scraping the sides as suggested. I rolled them into little balls after handmixing them and tucked them in the freezer. We’ll see how they come out!
