Peanut Butter Chocolate Flourless Muffins

These moist, chocolatey muffins are gluten free, dairy free, oil free and refined sugar free.

Ingredients
- 1/3 cup unsweetened almond milk vanilla
- 1 ripe banana
- 1 large egg
- 1/3 cup peanut butter creamy
- 2 tsp. vanilla extract
- 3 tbsp. unsweetened cocoa powder
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 cup peanut butter chips optional
- 3 tbsp. peanut butter powder
- 3 tbsp. agave (or honey or maple syrup)

Instructions
- Preheat oven to 375°F.
- Add all ingredients except peanut butter chips to WildSide+ or FourSide jar and secure lid.
- Select "Dips" cycle or blend on a Medium to Medium-Low speed for 30 seconds.
- Stir in peanut butter chips.
- Pour batter into greased or lined muffin tin (about ¼ cup batter per muffin). Optionally, sprinkle chocolate chips on top.
- Bake for 15-18 minutes or until done.
Notes
The peanut butter powder is used to cut down fat and calories. If you'd like, you can use another 1/3 cup of peanut butter instead of the powder but you'll want to decrease the almond milk to 3 tbsp.
Right. Non-GMO/organic is also very important. Checked out the Betty Lou’s Just Great Stuff and wow, I’m impressed. It actually DOESN’T contain refined sugar, but uses coconut sugar instead. My hat is off to this company! This is what we need more of—the use of coconut sugar rather than refined. Most people don’t realize that refined sugar not only has the same effect on the brain as heroin (which is why it keeps you craving MORE of it—more sugary foods), but it’s very acidic to the body (which is why it’s a cancer feeder and exacerbates any health issue one may have—minor to more serious). Plainly put, it IS toxic to the human body. But because it’s been apart of society forEVER, it’s viewed as safe to ingest. People really do need to eat less processed foods since sugar is in MOST along with other harmful chemicals and eat more real, whole, living, clean foods. And if one chooses to continue to eat processed foods, they need to learn how to read the labels to avoid eating garbage, which is what is making them sick and fat (from all the wrong, unhealthy oils, sugars, and chemicals).
Ah, glad you found it and it is indeed just great stuff, literally! Lol its been forever since I had it, no grocery stores in my area carry it, so I just stopped using the powder altogether, but JGS would be my recommendation for anyone looking to use peanut butter powder! As I recall they have regular. .. and chocolate too! I loved it in smoothies just because it is easier to clean up things using the powder than regular peanut butter. .. but also keep in mind there are some healthy benefits to the fats in regular peanut butter too, so no need to shun it altogether! ;) and I totally agree with you on processed foods and refined sugar, it is a shame to know what most people consider a regular diet is full of processed foods, refined sugar, preservatives, and dyes, etc. I wonder how this recipe would be using almond butter as well. .. :)
Would almond butter work instead of peanut butter?
I’ve got my muffins in the oven ….. but for 10 servings, there’s no way it’s 1/4 cup for each muffin! I only got 5 from this recipe at 1/4 cup. I did not use the optional chips. Are there ingredients (of significant volume) missing from the recipe, or should the recipe read 1/8 cup per muffin??
Why couldn’t you use Almond flour (home made from the almonds used to make almond milk) instead of Peanut Butter powder? And of course the peanut butter was made in the Twister jar. And Cacoa is preferred as Dana V says. (Don’t think this posted so if it did sorry for the duplicate.
