Prep the Wings

Whole chicken wings have three components: the drumette, the flat, and the wing tip. Before you begin cooking your wings, you’ll need to separate them. Start by removing the wing tip from the flat with a sharp knife or kitchen shears. The wing tip has very little meat so it can be thrown away or saved in a bag in the freezer to make chicken broth later. After removing the wing tip, find the joint between the drumette and the flat and slice between them with a sharp knife, creating two pieces. Some stores sell wings that have already been separated and if you prefer to buy those, that’s fine too!

Pat the wings dry after separating, because excess moisture in wings will make it difficult for them to get nice and crispy. Once dry, add some salt and pepper and toss with tongs to make sure the salt and pepper are evenly distributed.

  • ¼ tsp chili powder
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ¼ tsp cayenne pepper 

Instructions

  • Combine all ingredients into a blender.
  • Simmer in a saucepan for 20–30 minutes.

    Dude. Here goes. The easy way. Add 1 tablespoon of cold water to 1 tablespoon of cornstarch. Whisk till it’s well whisked. Slowly whisk this mixture into the sauce and let simmer couple minutes. Repeat as needed. More appropriate, but more difficult, Use wine or fat or butter then add equal amount flour and whisk and simmer till its an even slurry. then add this to your sauce. Or even, pulverize some okra in blender, add to your sauce. Or, keep Filé powder on hand. Add sparingly, only if the spicy, earthy, flavor goes with your dish. Any more, out there?

    Honey Bourbon Mustard Sauce
    1 cup honey
    1/2 cup bourbon
    1/2 cup grain mustard
    1 tablespoon worcestershire sauce
    2 teaspoons garlic powder
    1 teaspoon cornstarch (optional)

    Mix all ingredients except cornstarch in a pot. Bring to a simmer and reduce heat. Simmer for 20-30 minutes. If the sauce isn’t thick enough after 30 minutes, mix the cornstarch with 1 tablespoon of water and then mix it into the sauce. Bring the sauce back to a heavy simmer and then reduce heat to allow it to thicken.

    Heat oil in a large skillet to 375 degrees F (190 degrees C). Deep fry chicken wings in oil until done, about 10 minutes. Remove chicken from skillet and drain on paper towels. You can use canola, vegetable, or peanut oil.
