Broccoli-Cheddar Soup Recipe
Do you love cheesy broccoli soup, but not all the calories that go with it? Try this lighter version, and garnish with chopped walnuts for a protein boost.

Ingredients
- 3 oz. cheddar cheese roughly chopped
- 1/8 tsp. ground black pepper
- 1/8 tsp. ground nutmeg
- 1/4 tsp. kosher or sea salt
- 1 cup vegetable broth
- 1 cup water
- 4 cups broccoli florets steamed and divided

Instructions
- Add 3½ cups broccoli florets and remaining ingredients to WildSide+ or FourSide jar. Secure lid and select "Soup" or blend on a High speed for 90-180, blending longer for hotter soup.
- Add remaining ½ cup broccoli florets to jar. Secure lid and press "Pulse" 3–5 times or until broccoli florets are desired size.
Notes
Add a pinch of crushed red pepper for a little kick.

This was very fast, easy and tasty. I use chicken base instead of broth. I usually boil my water in an electric kettle before adding it to the jar with 1 tsp. chicken base. As a result, the soup was very hot at the end of the 90 second cycle. I substituted chili powder for the cumin and 3 cheese shredded Mexican for the cheddar. I only had one package of frozen broccoli so I cut the liquid to 8 oz. and used 2 oz. cheese. I will make this again, but save some of the broccoli on the side to add and pulse at the end for some texture. I’m sure fresh broccoli would taste even better.
My blender doesn’t have a "speed 9" :( I’m starting to not like my blender, because it can’t do anything but juice and ice cream — good juice and ice cream, but it’s all pre-set times, and sometimes it leaves chunks. :( It is a Blendtec brand, but not the best kind, I guess. Somebody got cheated?
