Ingredients

  • 1 1/2 cups low-fat milk
  • 1 cup wheat berries
  • 2 tbsp. canola oil
  • 2 large eggs
  • 2 tbsp. granulated sugar
  • 1 tbsp. baking powder
  • 1/2 tsp. kosher salt

Instructions

  1. Add milk and wheat berries to FourSide jar and secure lid.
  2. Blend on a High speed for 50 seconds.
  3. Add remaining ingredients to jar and secure lid.
  4. Press "Pulse" 57 times to incorporate remaining ingredients.
  5. Allow batter to rest 5 minutes.
  6. Pour ¼ cup batter onto greased, heated griddle, and cook approximately 1 minute or until bubbles break surface of pancake and underside is golden brown. Flip and cook for approximately 30 seconds. Repeat with remaining batter.
  7. Serve immediately or keep warm in oven at 200°F, loosely wrapped in foil.

    These are a staple in our house now. I made several batches and freeze them. We use 1 1/4 cup soft white wheat berries and substitute the canola oil for coconut oil. Don’t bother melting the coconut oil — it mixes in fine cold. My family prefers when I use 1 c. of milk + 1/2 c. yogurt. That gives the pancakes a nice tangy flavor. You could also use buttermilk. That would work as well.

    Great recipe! I’ve used it several times mostly for waffles. But I use raw whole milk from a local farm (NEVER use low fat ANYTHING), butter or coconut oil, (canola oil is so very bad for you), and honey (white sugar is a no no)
    Blendtec, I wish you would get up to date on what is considered "healthy." LOVE your blender but some of your recipes leave much to be desired.

    What does "Speed Up" to Speed 9 mean? I bought a blender at costco and it doesn’t have these settings? Your ‘conversion’ tables, such as they are, don’t even mention this sort of setting???

    I’ve taught several people how to make these pancakes and had a couple people buy Blendtecs just to make these pancakes. Can you please, please, please develop more recipes that start with wheat berries? Like brownies, muffins, etc? I keep meaning to play around with some of the other recipes but don’t really have the time. Looking forward to more recipes!
