Vegan Queso Recipe
This vegan "cheese" dip is a cinch to make - just throw everything in your Blendtec and let it do the work! Eat this vegan queso as a dip or make nachos by pouring this over chips with beans, pico de gallo, olives, jalapenos and guacamole.

Ingredients
- 8 fl. oz. water
- 1 tbsp. lemon juice
- 1/4 cup roasted red peppers
- 1/3 cup cashews raw & unsalted
- 1/3 cup almonds raw & unsalted
- 1/4 cup nutritional yeast
- 1 tsp. onion powder
- 1 tsp. sea salt

Instructions
- Add all ingredients to jar in order listed and secure lid.
- Run on "Soup" or "Hot" or "90" cycle twice or blend on a high speed for 180 seconds.
We have an older Blendtec so I started by using boiling water and letting the nuts soak a few minutes to soften them up a bit. Then added all the other ingredient and blended on the "fresh juice" mode twice. Strained it so the sauce would be smooth and both my husband and my son thought this was delicious "cheese" sauce on their broccoli tonight. They have no idea there was no cheese in it!
Needs to be thicker. I substituted soy milk for 1/2 of the water (1/2 c + 1/2 c). Next time I will also up the nuts to 1/2 c each.
My baby grandson is dairy intolerant Prior to finding out Mac n cheese was one of his favourites. Since discovering this recipe he can now have it again and this sauce is one of his favourites. Mum and Dad can get him to eat all his veg etc with addition of this Thank you so much (we also love it btw) Jacki Edinburgh

This looks delicious, I can’t wait to get my blender. I am replacing my V blender as it just can’t handle making peanut butter, I love to make my own nut butters but have a really hard time with current blender.
