Spiced Crème Brulee Recipe

Ingredients

  • 3 cups whipping cream
  • 1 1/2 tsp. vanilla extract
  • 3/4 cup granulated sugar divided
  • 10 egg yolks
  • 1/3 cup pumpkin puree
  • 1 tsp. pumpkin pie spice

Instructions

  1. Preheat oven to 325˚F degrees.
  2. Scald cream to 140˚F degrees with vanilla.
  3. While cream is scalding, add ½ cup sugar, pumpkin puree and egg yolks to the Fourside or WildSide+ Jar and secure lid. Pulse 3 times.
  4. Temper the egg yolks and sugar mixture by adding 2-3 tbsp. of scalded cream to egg yolk mixture and pulse 2-3 times.
  5. Add remaining cream and pulse 4-6 times until well mixed. Pour cream through a sieve slowly to remove bubbles.
  6. Pour strained mixture into 8 ramekins. Place ramekins in a pan with approximately 1 inch of boiling water. Carefully place pan with ramekins in oven for 30-35 minutes.
  7. When the cream is finished baking, transfer the ramekins to a new pan and place in the refrigerator for at least 4 hours.
  8. After the cream is sufficiently chilled, combine remaining ¼ cup sugar and pumpkin pie spice and sprinkle on top of cream. 
  9. Use a blow torch to caramelize the sugar and spices on top.

    Horrible choice for a dessert, nutritionally speaking. Twenty-three grams of saturated fat in only one-half cup?!!! I appreciate the Blendtec recipes that use healthy ingredients such as fresh fruits and vegetables.

    I REALLY wish BlendTec would stop posting recipes that do not require anything more than a regular blender! You’re not doing a very good job of setting your product apart from mainstream blenders. Don’t get me wrong, I love my BlendTec, but I really want to see something new.

    This is the first time we’ve tried a recipe like this, so we don’t have another version of it, or of a traditional Flan recipe. It is a great idea and something we could look into doing. Thanks for the idea!
