Ingredients

  • 3/4 cup half and half (half milk/half cream)
  • 1/2 small avocado
  • 1 tbsp. vanilla extract
  • 1/2 tsp. almond extract
  • 3 tbsp. granulated sugar or your choice of sweetener
  • 1 cup fresh spinach lightly packed
  • 2 1/2 cups ice cubes
  • 1/3 cup unsalted shelled pistachios

Instructions

  1. Add all ingredients except pistachios to FourSide or WildSide+ jar and secure lid.
  2. Select "Ice Cream" cycle or blend on a Low speed for 15 seconds, then on a Medium to Medium-High speed for 30 seconds.
  3. Add pistachios and press "Pulse" 2-4 times.
  4. Serve immediately or transfer to a bowl or Tupperware and freeze until desired consistency is reached.

Notes

To make this ice cream vegan, use coconut milk instead of half and half.

Remember to make this recipe your own! If you like it creamier or sweeter, add more cream or sugar. If you don't like larger pieces of pistachio, blend it to your desired texture.

    Followed directions to a T but had some serious issues.

    1. It would not blend properly. It initially mixed and blended a bit, but once it thickened and the ingredients incorporated the blade spun up very high but acted as if it was blending nothing. I could see some liquid moving around in the lower third of the jar but everything higher up just sat there. I stopped it, used a spatula to move things around, added some extra liquid, and the same thing happened, over and over and over. Very frustrating. I added a WHOLE lot more liquid (Half and Half and ice), and started it again. It took several more tries, stopping, using the spatula to stir it up, restarting. Finally got a decent result, texture-wise, but…

    2. It tasted very flat, boring, uninteresting, but with a very strong (and undesired) almond flavor. It needed way less almond extract. So I added more vanilla extract, and a few tablespoons of sweetened condensed milk. Blended it again.

    Finally got something decent and reminiscent of pistachio ice cream, but at best it was pretty average. Just not a lot of flavor, and what was there was not all that interesting.

    Pass.
