Blendtec Recipe - Moist Nut 'N Honey Granola

Ingredients
- 3 cups chopped almonds optional
- 1/2 cups dried soybeans or white beans
- 2 tsp. ground cinnamon
- 2 cups honey
- 1 tsp. kosher salt
- 1/4 cup molasses
- 2 cups raisins or other dried fruit optional
- 10 cups rolled oats
- 1 cup sesame seeds
- 2 cups shredded coconut
- 2 cups sunflower seeds
- 2 tbsp. vanilla extract
- 1 cup vanilla ice cream
- 1 cup water

Instructions
- Add soybeans or white beans to Kitchen Mill, and grind into flour; set aside.
- Add honey, molasses, water, vanilla ice cream, vanilla extract, salt, and cinnamon to saucepan; cook over medium heat. Meanwhile, add soy or white bean flour, sunflower seeds, sesame seeds, oats, almonds (if desired), and coconut to large bowl.
- Pour honey mixture over dry ingredients and mix well.
- Spread thinly on baking sheets, and bake at 325°F for 20–30 minutes, stirring every 5 minutes to break up chunks.
- Reduce heat to 250°F, and bake additional 30 minutes, stirring occasionally.
- Allow to cool, and add raisins or other dried fruits, if desired.
- Store in airtight container.
Note: Makes 1 gallon.
