Ingredients

  • 4 tsp. baking powder
  • 1 cup cornstarch
  • 2 eggs
  • 1 1/2 cups fat-free milk divided
  • 1 tbsp. granulated sugar
  • 1/2 tsp. kosher or sea salt
  • 1/2 cup raspberry jam or preserves
  • 1 cup rice flour
  • 1 tsp. xanthan gum

Instructions

  1. Add ¾ c milk, jam, and all dry ingredients to FourSide or WildSide+ jar.
  2. Add remaining milk and eggs, and then secure lid. Select “Batter.”
  3. Use rubber scraper to scrape down any unblended flour, and press "Pulse" until ingredients are incorporated. Allow batter to rest 5 minutes.
  4. Grease griddle or other pan, and heat over medium-low to medium heat.
  5. Pour ¼ cup batter onto heated pan, and cook approximately 90 seconds or until bubbles break surface of pancake and underside is golden brown. Flip and cook for approximately 30 seconds. Repeat with remaining batter.
  6. Serve immediately or keep warm in oven at 200°F, loosely wrapped in foil.

Notes

Add a few drops of red food coloring for a more vibrant color.

    Put about 2 cups of rice in your FourSide jar (or 3 cups in your WildSide+ jar) and blend on a high speed until you get a fine flour. Happy blending!

    Can you make these without xanthan gum?

    You can try substituting the xanthan gum with guar gum, chia seeds, flaxseed or arrowroot powder, however, we haven’t tried the recipe with those substitutes and they may change the texture of the pancakes. We recommend making them with the xanthan gum for best results.

    Me and my sister wanted to have pancakes for breakfast… and to make them with our new Blendtec. We tried these and we LOVED them! But we didn’t have jam…. So we didn’t get the whole taste. Now we have jam and I’m going to make them! Lets hope their as good as they look!
