Glazed Lemon Bread

Ingredients
- 2 1/4 cups all-purpose flour
- 1/4 tsp. baking soda
- 3/4 cup buttermilk
- 3 large eggs
- 3 1/2 tbsp. fresh lemon juice
- 1 1/2 cups granulated sugar
- 1/4 tsp. kosher salt
- 2 cups powdered sugar
- 3/4 cup shortening
- Zest of 1 lemon

Instructions
- Preheat oven to 350°F.
- Add shortening, sugar, eggs, buttermilk, and lemon zest to FourSide jar. Secure lid and select "Batter."
- Add flour, baking soda, and salt to jar and secure lid. Press "Pulse" 4–6 times or until flour is incorporated.
- Pour batter into 2 greased 9"x 5" inch loaf pans. Bake for 30–35 minutes or until toothpick inserted in center of loaf comes out clean.
- Meanwhile, add powdered sugar and lemon juice to clean jar, secure lid, and select "Sauce."
- After removing loaves from oven, pour glaze over tops of loaves.
I’m going to try this blendtec technique with other loaf recipes with lower cholesterol and sugar.
What size loaf pan do you use?
9"x 5", and this has been updated on the recipe.
Shortening?? Really?? I thought Blendtec was part of a healthy lifestyle.
instead of shortening could you use coconut oil???
