Ingredients

  • 1 tbsp. active dry yeast
  • 2 1/4 cup all-purpose flour
  • 1/4 tsp. baking soda
  • 4 tbsp. butter divided
  • 1 tbsp. coarse salt
  • 1 cup cottage cheese
  • 2 1/2 tsp. dried dill
  • 1 large egg
  • 2 tbsp. granulated sugar
  • 1 tsp. kosher salt
  • 1/4 cup lukewarm water
  • 1 tbsp. onion minced

Instructions

  1. Preheat oven to 350°F.
  2. Add warm water and yeast to Mix n Blend II blender jar. Secure lid and press "Pulse" 2 times. Allow yeast to proof for 5–10 minutes.
  3. Heat cottage cheese until just warm, and add cottage cheese, sugar, onion, 2 tablespoons butter, dill, salt, baking soda, egg, and yeast mixture to Mix n Blend II mixing bowl. Select "Whip" option.
  4. Add flour and press "Auto Knead" button.
  5. Transfer dough to floured surface; cover and let dough double in size. Punch down; divide into 2 loaves.
  6. Place each in large, greased loaf pan; let rise until doubled in size.
  7. Melt remaining 2 tablespoons butter, and brush on tops of loaves. Sprinkle with coarse salt.
  8. Bake for 30–35 minutes.
