Creamy Tomato-Basil Soup Recipe
This updated version of traditional tomato soup gets its creamy texture from cooked beans, rather than high-fat, high-calorie dairy products.

Ingredients
- 2 cups sprouted soy or white beans
- 2 cups tomato sauce
- 1 tbsp. chicken or vegetable bouillon
- 1 large onion quartered
- 1/8 tsp. dried basil
- 1 qt. warm water divided

Instructions
- Cook beans and onion in 1 quart boiling water for 15–20 minutes. Allow to cool.
- Add beans, onion, and 1 cup of cooking water to FourSide or WildSide+ jar and secure lid.
- Select "Soup" or "Hot" or "90" cycle or blend on a High speed for 90 seconds.
- Add remaining cooking water, bouillon, tomato sauce, and basil to jar and secure lid.
- Press "Pulse" 2–4 times to incorporate ingredients.
Fresh tomatoes may be used in place of tomato sauce. Use 4-5 medium tomatoes. Blend the tomatoes with the onion and bean sprouts and water (decrease water from 1 cup to ½ cup).
Bean sprouts are used in this recipe and are typically found in the produce section of the super market. Canned white beans may be used as a substitution for bean sprouts, but decrease the amount from 2 cups to 1 cup. The use of canned beans may cause the soup to take on a starchy flavor.
The tomatoes can be used fresh or cooked. With fresh, the color of the soup will be orange and the soup will taste like fresh tomatoes. With cooked tomatoes, the soup will have a deep red hue and taste like cooked tomatoes.
The state of the world has deteriorated so much that people actually make comments on a recipe about whether or not it should be as stated. If you don’t want to eat something, don’t eat it! Don’t take a recipe author to task because they have included ingredients you deem unhealthy. It would be akin to writing the author of a cookbook because they didn’t write it "your" way. There’s no right or wrong in a recipe, it’s about personal taste. (Food is made to be enjoyed!)
Great soup. I used chicken stock instead of bouillon and water. I sautéed the onions instead of boiling, and I added sautéed carrots, celery, two cloves of garlic and two jalepenos.
