Ingredients
- 1/2 clove garlic
- 1/2 tsp. kosher or sea salt
- 1/4 tsp. black pepper
- 1/4 bunch fresh parsley stems trimmed (approximately ⅓ cup)
- 2 green onions trimmed and halved
- 1 tbsp. fresh lemon juice
- 2 cups plain nonfat yogurt
- 2 large cucumbers peeled and quartered

Instructions
- Add ingredients to WildSide+ Jar in order listed and secure lid. Select "Soup" or blend on a High speed for 90 seconds.

Note: Serve this soup with your favorite whole grain cracker.
This resembles the Bulgarian Tarator. Replace the parsley and onions with fresh dill and top with finely chopped walnuts and drizzle with olive or safflower oil. Also, tastes better with whole milk yogurt.
what can be a substitution for parsley? is spinach good?
Cilantro would probably be the best substitute for parsley but if you want to use spinach you can. It will have a bit of a different taste, though.
I made this today and it is so yummy and refreshing! I am on a diet that requires me to eat a snack invetween my meals and this is a perfect snack idea! Low calorie and delicious!
