3 Tasty Energy Bites
Everyone enjoys snacking, right? We don't know anyone who doesn't enjoy a little pick-me-up in the middle of the day. But sometimes that snack ends up being a candy bar or cookie or something that isn't very healthy, so we've created three tasty energy bites that you can enjoy snacking on without feeling guilty.
These are high in protein and healthy fats and lower in carbs and sugar than most snacks. Whether you enjoy the tastes of peanut butter, chocolate, or fruit - you're bound to enjoy one of these energy bites.
Peanut Butter Chocolate Energy Bites
Ingredients
1 cup oats (you can use gluten-free)
2 tbsp ground flaxseed
½ cup peanut butter
1 tsp vanilla extract
2 tbsp honey (you can use agave, but you may need to use a bit more to get the right consistency)
¼ cup chocolate chips Instructions
- Add oats and ground flax to Twister jar.
- Blend on a Low speed for 10 seconds. Turn Twister lid counter-clockwise during blending.
- Add peanut butter, vanilla and honey to mixture.
- Blend on a Low speed for 20 seconds. Turn Twister lid counter-clockwise during blending.
- Stir or pulse in chocolate chips.
- Shape into 1” balls and store in an airtight container in the fridge.
YIELDS: 16 energy bites

Lemon Blueberry Energy Bites
Ingredients
2 ½ cups raw cashews, unsalted
3 soft Medjool dates
1 tsp vanilla extract
1 tbsp fresh lemon juice zest of ½ lemon
2 tbsp dried blueberries
Instructions
- Add half of cashews, then the dates and then the rest of the cashews to the Twister jar.
- “Pulse” 10-15 times. Turn Twister lid counter-clockwise during blending.
- Add vanilla, lemon juice, lemon zest and dried blueberries to mixture.
- “Pulse” 8-10 times. Turn Twister lid counter-clockwise during blending.
- Shape into 1” balls and store in an airtight container in the fridge.
YIELDS: 9 energy bites

Joyous Almond Energy Bites
Ingredients
1 cup oats (you can use gluten-free)
2 tbsp ground flax seed
1 tbsp cocoa powder
½ cup almond butter
1 tsp vanilla extract
2 tbsp honey (you can use agave, but you may need to use a bit more to get the right consistency)
½ cup shredded coconut
¼ cup dark chocolate chips
Instructions
- Add oats, ground flax and cocoa powder to Twister jar.
- Blend on a Low speed for 10 seconds. Turn Twister lid counter-clockwise during blending.
- Add almond butter, vanilla, honey and shredded coconut.
- Blend on a Low speed for 20 seconds. Turn Twister lid counter-clockwise during blending.
- Stir or pulse in chocolate chips.
- Shape into 1” balls and store in an airtight container in the fridge.
- Roll in unsweetened shredded coconut.

These look fantastic! I usually use grade B maple syrup in place of honey. Will I need to adjust for consistency like you need to with agave?
Also, these look like they might freeze well. I was thinking about freezing them and then taking them on a trip (e.g., hiking, road trip or flying) so by the time I eat them, they’ll be cool but defrosted. Do you think that would work OK?

Can these energy bites be made in the FourSide jar?
How can I use these recipes without a twister jar? I have a WildSide jar on my blender. Will any settings work with that?
I have two other blenders, but I bought the Blendec because of the “hot” feature – I wanted to make hot soups in a hurry in the evening. I am disappointed first because it does not heat very much, and second because it is incredibly noisy. So for the much higher price I paid for the added feature (heating) I wonder whether I made the right decision.
To make in a different jar or blender, do the dry ingredients first, add the sweetener and blend until crumbly. Place in a bowl and cut in the remaining liquid ingredients with a pastry cutter. Roll into balls as directed. 2 1/2 cups cashews ~= 2 c cashew butter if you want to just stir it all together (Lemon balls).
