Vegan Apple Pancakes
These Vegan Apple Pancakes are full of whole grains and come in at only 75 calories per pancake! We recommend making our Apple-Cinnamon Syrup (pictured) to complete this delicious meal.

Ingredients
2½ cups water
½ cup raw almonds
1 medium apple, quartered and cored
1 tbsp flaxseeds
2 cups whole wheat flour
1½ tbsp baking powder
½ tsp kosher or sea salt
½ tsp ground cinnamon
Instructions
- Add water, almonds and apple to jar and secure lid. Select "Whole Juice" or blend on a Medium to Medium High speed for 50-60 seconds.
- Add remaining ingredients to the jar and secure lid and select "Batters" or blend on Medium Low to Medium speed for 30 seconds. Allow batter to rest 5 minutes.
- Heat griddle or other pan over medium to medium high heat and grease. Pour approximately ¼ cup batter onto heated pan and cook approximately 1 minute or until bubbles break the surface of the pancake and the underside is golden brown. Flip and cook for approximately 30 seconds. Repeat with remaining batter.
- Serve immediately or keep warm in the oven at 200˚F loosely wrapped in foil.
This is now one of my go to recipes for busy evenings. My daughter has wheat and dairy allergies so I substituted my favorite gluten free flour mix and they are delicious!! Definitely a keeper!!
