Vegan Apple Pancakes

These Vegan Apple Pancakes are full of whole grains and come in at only 75 calories per pancake! We recommend making our Apple-Cinnamon Syrup (pictured) to complete this delicious meal.

Vegan Apple Pancakes

Ingredients

2½ cups water
½ cup raw almonds
1 medium apple, quartered and cored
1 tbsp flaxseeds
2 cups whole wheat flour
1½ tbsp baking powder
½ tsp kosher or sea salt
½ tsp ground cinnamon

Instructions

  1. Add water, almonds and apple to jar and secure lid. Select "Whole Juice" or blend on a Medium to Medium High speed for 50-60 seconds.
  2. Add remaining ingredients to the jar and secure lid and select "Batters" or blend on Medium Low to Medium speed for 30 seconds. Allow batter to rest 5 minutes.
  3. Heat griddle or other pan over medium to medium high heat and grease. Pour approximately ¼ cup batter onto heated pan and cook approximately 1 minute or until bubbles break the surface of the pancake and the underside is golden brown. Flip and cook for approximately 30 seconds. Repeat with remaining batter.
  4. Serve immediately or keep warm in the oven at 200˚F loosely wrapped in foil.

    This is now one of my go to recipes for busy evenings. My daughter has wheat and dairy allergies so I substituted my favorite gluten free flour mix and they are delicious!! Definitely a keeper!!
