Lime-Cilantro Marinade
Use this recipe as a marinade for fajitas or as a sauce drizzled over fish tacos topped with sliced cabbage and pico de gallo.
INGREDIENTS
1 tbsp honey
2 cloves garlic
2 chunks red onion, approximately ¼ c
4 limes, peeled and halved
1⁄3 cup canola oil
1⁄2 cup fresh cilantro leaves
1⁄4 tsp ground black pepper
1⁄2 tsp kosher salt
1⁄4 tsp dried oregano
INSTRUCTIONS
- Add ingredients to jar in order listed and secure lid.
- Select "Sauce/Dips" cycle or blend on a Medium to Medium-Low speed for 25-30 seconds.

This is what our Registered Dietitian suggests: The marinade will last for 3 days in the fridge, but it freezes well too. If you need it to last longer than 3 days, freeze immediately and use as needed. I like to freeze my marinades in an ice cube tray so I can use as little or as much as I want at one time.
