    To better preserve the part of the avocado you are going to use later, leave the pit in that half. The pit somehow retards the oxidation of the flesh.

    Likewise, if you make guacamole and plan to serve it later, put a pit in the prepared guacamole and cover the bowl with plastic wrap. When it is time to serve remove plastic wrap and pit and there should be no discoloration.

    Hi Joan,
    Wrap the other half in plastic wrap and put it in the refrigerator until ready to use. It’s best if used within a few days. The exposed flesh may turn brown, but that is because it’s been oxidized, but it is safe to consume.

    I don’t have a problem with cutting it. But I haven’t figured out a way to keep the part fresh that I don’t use in the smoothie. Does anyone have the answer to that?
