5 Festive Holiday Recipes

It's the most wonderful time of the year! I think most will agree, one of the best things about the holidays are the delicious foods and drinks. Here are a few of our favorites this year.

Holiday Cranberry Cookies

Ingredients

½ cup butter, softened
1 egg
½ cup brown sugar, packed
1 tsp vanilla extract
1 cup all-purpose flour
½ tsp ground cinnamon
½ tsp baking soda
¼ tsp kosher or sea salt
1⅔ cup rolled oats
½ cup dried cranberries
½ cup white chocolate chips

Instructions

  1. Preheat oven to 350°F.
  2. Add first 5 ingredients to jar and secure lid.
  3. Blend on Speed 1 (Low) for 15 seconds.
  4. Add flour, cinnamon, baking soda, salt and 1 cup oats to jar and secure lid.
  5. Blend on Speed 1 (Low) for 10 seconds.
  6. Using a Spoonula or rubber scraper, fold in remaining oats, cranberries and chocolate chips.
  7. Spoon tablespoon size balls onto parchment-lined cookie sheet and bake for 10 minutes at 350°F.

Flavored Hot Chocolate

Ingredients
1¼ cups low-fat milk (or your choice of milk)
1¼ cups water
2 tbsp unsweetened cocoa
¼ cup brown sugar
Flavor Options:
1 tsp orange extract
1 tsp peppermint extract or 1 candy cane
1 tsp raspberry extract or ¼ cup raspberries
1 tsp hazelnut extract or 1 tbsp toasted hazelnuts
1 tbsp caramel pieces
1 tsp coconut extract or 1 tbsp toasted coconut flakes

Instructions

  1. Add ingredients to jar in order listed and secure lid. Select "Soup" or "Hot" and run 2 full cycles.
  2. If your blender does not have a "Soup" or Hot" cycle, blend on High (speed 9) for 180 seconds.

Cookie Butter

Ingredients
1½ cups cookies, halved (Biscoff, ginger snap, graham crackers, etc.)
1½ tbsp coconut oil
2 tbsp cashews, roasted
2 tbsp brown sugar

Instructions

  1. Add all ingredients to Twister jar in order listed and place Twister lid on jar. Hold Twister lid with one hand, and with other hand select Speed 7.
  2. Blend for 35 seconds for a chunky texture or 50 seconds for a smooth, spreadable texture. 
  3. Turn the Twister lid counter-clockwise during blending.
*NOTE: You can make this in the FourSide or WildSide+ jar but you may need to double or triple the recipe as well as stop several times during blending to scrape the sides back down to the blade.

Eggnog French Toast

Ingredients
eggs
8 fl oz eggnog
¼ tsp ground nutmeg
1 loaf Texas toast

Instructions

  1. Add eggs, egg nog, and nutmeg to FourSide or WildSide+ jar and secure lid. "Pulse" 5-7 times.
  2. Pour egg mixture into pie plate.
  3. Grease griddle or other pan.
  4. Dip one slice of Texas toast into egg mixture, and then flip slice to coat other side.
  5. Place slice on griddle over medium- to medium-high heat, and cook approximately 3 minutes or until underside is golden brown.
  6. Flip and cook approximately 1 mintue.
  7. Repeat with remaining bread slices.
  8. Keep warm in oven at 200°F, loosely wrapped in foil, or serve immediately.

Blackberry Thyme Preserves

Ingredients
3 cups blackberries
1 cup blueberries
1 cup honey
1 tsp fresh thyme
1 pkg powdered pectin

Instructions

  1. Add ingredients to FourSide or WildSide+ jar and secure lid.
  2. Select "Batters" or blend on Medium Low (speed 3 or 4) for 30 seconds.

Yields: 28 ounces

Serve as a spread or even a chutney or over a soft cheese eaten with crackers. Good for up to three weeks, when stored in the fridge. Happy Holidays!
