When I make this soup I make the following changes: use fresh garlic, half a red pepper, half an avocado, a slice of pepper jack cheese, and 1/4 of an onion-everything the same. The texture comes out perfect. Don’t forget the cilantro it adds a lot of flavor. I do not put tortilla chips in my soup but I crumble a few and sprinkle on top when I serve it. I add in corn and black beans at the end which I warm up in the microwave before adding. I give it a barely second pulse to mix in as I don’t want the black beans and corn chopped but like to leave whole. The blender will make the soup quite warm which is good for me but my husband often heats his in the microwave as he likes it hot. This soup is my favorite!
Don’t miss this soup. I also made with warm chicken stock. Play with additional ingredients. I used hot Mexican cheese and the texture and heat were perfect.
We add more veggies and roast them all. Roast garlic instead of garlic powder. Use more acacado and cheese. Makes the soup much thicker and richer. Very good base recipe though. Tweak it to suit your taste.

we used chicken stock instead of water, added a can of mild green chiles, and fresh garlic instead of the powder and it got a much better flavor. we like adding the black beans after and heating in a pan
