Pumpkin Chocolate Chip Cookies

Ingredients
- 1/2 cup butter softened
- 1/4 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 tsp. vanilla extract
- 1/2 cup pumpkin puree
- 1 tsp. pumpkin pie spice
- 1/4 tsp. ground cinnamon
- 1/4 tsp. kosher or sea salt
- 1/2 tsp. baking soda
- 1 1/2 cups all-purpose flour
- 1 cup semi-sweet chocolate chips

Instructions
- Preheat oven to 350ºF.
- Add first 6 ingredients to WildSide+ jar and secure lid. Select "Batters" or blend on Medium Low (speed 3 or 4) for 30 seconds.
- Add dry ingredients to jar and secure lid. "Pulse" 10-12 times.
- Fold in chocolate chips.
- Drop tablespoon-sized cookie dough onto greased cookie sheet and bake for 10-12 minutes.
I made these with an added teaspoon of cinnamon. The flavor was acceptable, but the texture of the cookies is quite cakey.
I’ve made these twice now. I used a rounded teaspoon of the pumpkin pie spice and a rounded quarter teaspoon of the cinnamon. I also added a half cup of salted shelled pumpkin seeds. Yum!!! The cookies remind me a bit of pumpkin bread only softer. Will make again and again!

I just made these, but……used a banana instead of the pumpkin (I didn’t want to open a can I wasn’t sure I could use all of) then cooked the dough in my waffle maker (for something different). They were awesome!! Not like a cookie, but more like a chocolate chip waffle cake. VERY sweet and tasty :)
These cookies are very soft but quite bland. I recommend adding additional cinnamon and/or pumpkin pie spice.
