Was desperate for a quick, easy lunch that I could "eat" at my desk. Had some greens in the refrigerator that needed to be used quickly. I adjusted slightly: Almond Milk instead of water, added 1/4 cup frozen cranberries, with a tablespoon of peach preserves to offset the cranberry tartness; used frozen mixed berries instead of just blueberries, and added 1/4 cup mixed, unsalted nuts for more protein (remember, I was going for a meal replacement here); my banana was frozen. Instead of straight spinach I used a Spring Mix. Very delicious. In hindsight, after tasting, I probably could have eliminated the peach preserves.
